Pizza is a staple food in many people’s lives. Everyone knows the basic recipe: dough, sauce, cheese, toppings. But since everyone is so familiar this food, it can be hard to find a slice that is truly unique and visionary.
But luckily, vision is the specialty of Charlie’s Rustic Pizza. Charlie’s Rustic Pizza, as a company, are truly dedicated to making quality and delicious pizzas.
Established in 2018, they are a licensed mobile food vendor that sells neo-Neapolitan pizzas and many other varying styles of pizza.
“We opened to the public in 2020 to serve a quality, handmade, artisan approach to pizza,” said owner and operator Ray Cullison. “We wanted to bring a new style of pizza to the public in our area that specializes in high quality organic ingredients, passionate doughmaking, and a strong desire for pizza in general.”
Their hours and location changes regularly as they also specialize in private catering and special events, so it’s important to check their social media for updated information. They can be found on Instagram at @charliespizzeria and on Facebook at “Charlie’s Rustic Pizza.”
Cullison’s passion for pizza permeates every aspect of his business.
“My passion started early while I would make homemade pizzas for my family and friends,” Cullison said. “My obsession with doughmaking started early as I was trying to perfect a specific recipe and style that was unique. Over time, our dough and sauces started to take [off in] a direction I was pleased with. Then I started getting great positive feedback from people [who suggested] I start a business, [and] in 2021, I resigned my position at the United States Postal Service to fully engulf myself in pizza.”
This passion is no culminating in the construction of a brand-new trailer. The new trailer is currently being built in Georgia and will be twice as large as their current trailer once finished. It will come complete with a large wood brick oven and multi-fuel capabilities. Cullison said that the new trailer will allow them to keep creating delicious pizzas and allow them to increase their production by 60%.
In addition to the new trailer, there are also plans to double their amazing 8-person staff by September of this year.
“Once our new trailer is licensed, we will be expanding our pizza selections to New York style pizzas and Roman Alla Pala pizzas,” Cullison explained. “Our goals are to grow and get more product out in the surrounding cities and areas.”
And part of getting their product our there is participating in competitions. According to Cullison, Charlie’s Rustic Pizza has competed in several divisions in the International Pizza Convention and are currently a finalist in the Real California Milk Pizza competition. They are one of only four competitors in the Real California category, and they had an all-expenses paid trip to Napa, CA to compete on June 21 at the Culinary Institute of America for cash prizes.
Cullison said, “We want the community to know that we are building bigger and stronger to bring a diverse group of pizza styles that derive directly from Italy [made with] high-end meats and cheeses and all-organic produce and flours. We love our community and the support they have given us to get us where we are today.”
